Salsa Eggs 'n Cheese


I found the world's absolute BEST salsa! Beelzebub's Salsa is made locally, no preservatives and absolutely delicious. I'm sorry to have to say, it's also sooooooo addictive and really only available locally due to the short shelf life because it's all fresh!

This recipe is one of many, inspired by my new addiction to Beelzebub's Salsa. I had the Salsa Eggs 'n Cheese with 2 Light Muffins for lunch today. Total points® for this yummy lunch, 6, because I added extra cheese!



Salsa Eggs 'n Cheese

1 container egg beaters (equal to 2 eggs) - 60 cal, 0g fat, 0g fiber (1)
1/4 Cup all natural, homemade salsa (0 pts counts as 1 veggie) (0)
1/6 Cup Shredded Mexican Blend Cheese - 55 cal, 4g fat, 0g fiber (1)
1 Tablespoon fat free milk (0 pts for this quantity) (0)
salt & pepper to taste

Simply beat with fork, eggs, milk, salt & pepper
Place in medium heated pan and cook until almost completely firm
Add salsa & cheese, cook until most moisture is gone

*Notes:

  • Pay attention to ingredients - if you don't create your own salsa that you know what's in it you may have to add points® for the salsa. As always, with ANY recipe use the nutritional information on the package of your ingredients to determine your points.

  • Using a fat free shredded cheddar will allow you more cheese for the points® but I love the flavors of the Mexican shredded & if I have the points® to spare will use them.

Created as listed above the entire dish of Salsa Eggs 'n Cheese comes out to 2 points
®!

Add on a light English Muffin or Weight Watcher
® Bagel on the side and you have a complete meal! The amount of egg, along with the salsa makes for a very filling dish! Great for lunch or to start your day off at breakfast!

Flatly Fine Pot Pies (4)





Use a "Sandwich Maker" to create low point, low fat, Weight Watcher friendly comfort food... like "Pot Pies"

Flatly Fine Pot Pies


1 Flat Out Honey Wheat Bread 100 Cal 2g Fat 7g Fiber (1)
1 Flat Out Honey Wheat Bread 100 Cal 2g Fat 7g Fiber (1)
1/2 can Campbells Chunky Microwave 140 Cal 3.5g Fat 3g Fiber (2)
Sirloin Burger w/Country Veggies Soup (*new "lean meat full serving veggie version)

Spray each flat out bread quickly with non-stick spray
Place 1 flat out bread, spray side down, on bottom half of sandwich maker
Place 1/2 can of soup, divided evenly, amongst 4 sections of sandwich maker.
Close & cook until crispy as desired

Serves 1
Points 4

Soup's On!



FALL: It's SOUP TIME
I never used to be a huge fan of soups. I wouldn't say I "hated" them by any means but I rarely found them to be something that was so filling and delicious I had to have them constantly. Of course, there was the exception of my childhood, where I ate Campbell's® cream of tomato soup ever day of my life at lunch. I do not exaggerate! My mother would get so mad because (back then we came HOME for lunch.. imagine that? LOL) every time I'd leave in the morning she'd ask "What do you want for lunch honey?" and my OBVIOUS answer was "Um, tomato soup mom! NOT anything else PLEASE?!"

This undoubtedly led to her every once in a while making "chicken noodle" because my friend, Sheila, (who's mom WORKED! and wasn't home to make her hot lunches *gasp*) liked chicken noodle better. I would get so upset & even sometimes cry when I smelled the chicken noodle soup coming up the stairs. LOL Yes, I had issues... spoiled brat that I was! My mom finally gave in and always made ME my tomato soup & my friend her chicken noodle. The only "variations" were what went with the cream of tomato soup... slices of freshly baked Italian bread from the bakery up the road, toasted cheese sandwiches or crackers (and those varied from plain ol' saltines to the very 'gourmet' Ritz® LOL) Life was good from then on!

As I "aged" though, I never was a huge fan of soups for dinners. I know, lots of people loved it when I made soup for dinner & I did make it often (the family loved it) but rarely would I enjoy it like everyone else seemed to be doing. My cream of potato soup, taught to me by my ex-husband's aunt, was the one exception to that rule but as you can imagine there is no lack of calories or fat involved in this delicious pot of goodness so, especially now, it's not on the stove all too often. I have managed to bring the calories & fat down to about 1/2 using skim milk & turkey bacon & topping with fat free cheddar but it's never going to be a super "point® friendly" soup.

Oddly enough I am slowly coming back around to "soups". Perhaps it's true we digress back into our childhood as we "age"? Or maybe I just never grew up (I think that's the stronger possibility). I also think that a lot of this change in taste for soups comes with the demand of the consumer wanting better tasting, more filling, simply better soups from a can. As always, Campbell's® seems to be the leader of the soup industry in coming out with better tasting & now even better for you brands & styles of soups!

A recent email from the company led me to purchasing a few of their "new" brands/styles of Chunky Soups. These soups were created to be a healthier option to the same styles of soups they offered previously only now made with lean meats, more veggies & simply lower in calories & fat. Many even boast 3 or more grams of fiber per 1 cup serving also! That's a real plus! I picked up a few different types of soups and have attempted to try out a few here and there. With fall weather upon us here in Erie, PA I'm quick to enjoy a warm cup of soup now but especially if I can have that cup of filling soup for 3 to 4 points®! Add a toasted Weight Watcher® brand bagel or Arnolds® Sandwich Thin for a point® or two more and you have a truly hearty & filling lunch!

It shows some of their "lean meat" and "full serving" styles of soups that have just come out, including the one I most recently devoured: Campbell's® Chunky Beef Rib Roast with Potatoes & Herbs. 1 Cup of this awesome, flavorful soup comes in at 2 points®! Boasting Nutritional Information like 110 Calories, 1g Fat & 3g of Fiber you can afford 2 servings at lunch, without cringing (1 cup = 1 serving)!

If you're looking for an amazing, filling, flavorful, easy, & inexpensive lunch this fall & winter I highly suggest checking out the newest products available from Campbell's®. Unlike the Progresso® Soups that have been "authorized" by Weight Watchers® to boast 1 or 0 point® values... these soups are hearty, stick to you styles that don't all taste the same. I'm sorry but the Progresso® Soups all taste like the same boring chicken broth with different unflavored ingredients tossed in. Most of the ingredients being bland veggies to make it "low in points". I'll give up a point® or two for some flavor and some content thank you! With the Campbell's new line you get something that sticks with you the rest of the day and has tons of flavor! They all don't taste the same either! Each broth seems to be unique, with a lot of use of herbs & spices to give it a little something extra with each bite! The lean meats make a huge difference in the nutritional information also, and as far as I'm concerned it was about time Campbell's® decided to put up some of their awesome flavors in a more nutritionally respectable style!

Bruschetta Panini on Sourdough Bread


Sometimes you simply have to put your points into the flavor and texture of one main ingredient to get best results. This is a case where you can afford to put those "big points" into a splurge of bread because the fillings & insides of what creates this delicious sandwich is virtually pointless! (In a good way)

I first found this delightful creation at a friends local Coffee Shop/Cafe located at the mouth of Presque Isle, here on Lake Erie. Presque Isle Gallery Coffeehouse (click the name to get to their site) offered up this delicious treat which sounded very "point® friendly" to the Weight Watcher® side of me! After figuring out about what the points would be I decided I could definitely eat their version, within reason, and could make my own slightly even less fat/calorie version at home. PIG (as it's often referred to) makes their OWN bruschetta also, making the filling absolutely DIVINE! I personally am not that energetic and purchase mine at the local Wegman's Olive Bar, but it works out fine that way too! I guesstimated the PIG version of this delightful treat come in around 8-9 Points® but you can easily trim those down by using fat free versions of cheeses & even, slightly thinner sliced breads that come in at under 1 oz. each if needed. I personally don't mind using the points in a full 1 oz. slice of the sourdough bread as the fillings keep the sandwich coming in fairly well still. Of course, using a low cal/diet bread would really bring the points down at 1 pt for the bread alone as opposed to 4 pts for the full version of sourdough but it will also change the flavor/texture. So it all depends upon what you're willing to give up or add on! Make it your own though!

Bruschetta Panini on Sourdough Bread (6)



2 slices sourdough bread (This is where the points are in the entire recipe but SO worth it! Nutritional info on the sourdough bread should go according to your package but the average/general information is here.) (4)
4 Tbls. Bruschetta (At 30 calories per 2 Tbls. it's a cheap date!) (1)
1/4 cup shredded fat free mozzarella cheese (1)
Olive Oil Spray (for panini grill or pan) (0)

Building the Sandwich:

Simply spray your pan/grill with olive oil before starting. Then place one slice of sourdough bread on grill, top with bruschetta & spread evenly across bread. Spraying the pan, as opposed to pouring oils on top of the bread itself saves points®, calories & definitely makes the sandwich less "greasy" in the end.

Add fat free mozzarella on top & place 2nd slice of bread on top of that.

Now grill using method(s) below.

Method of cooking:

If you have a panini grill, that's great but a "Foreman Style" grill can work just as well, and even a plan ol' fry pan can work. The trick with a panini is to grill the bread to a nice crispness while applying some pressure so if you're using the fry pan method, simply use a smaller frypan to push down on the top of the sandwich as you grill. You will also have to "flip" the sandwich when using this method of grilling your panini.

* As with all recipes points®/calories/fats will vary according to ingredients so please be sure to figure your own nutritional information out according to the packages & information of the products you use.
