All Natural Healthy Breakfast Sammies


One of my fiance's favorite foods I make are my breakfast sammies. They've become a bit of a "tradition" on weekends here, with our weekend being a day longer than most we get to celebrate together a little longer than regular couples. On Fridays I jump a little "off program" in the sense I don't make sure anything's all natural for my breakfast but I'm pretty sure it's not loaded too much with unhealthy options in the sense that the meatballs are the worse part of my meatball omelet but the sauce is a homemade sauce & meatballs. I no longer opt for the supposed "healthier" fake eggs but instead count the extra point per egg for a whole, natural "what comes outta the chicken" style egg and not something processed into a carton. Basically I end up justifying the fact that it's not all organic or totally unprocessed once a week (sometimes less) to enjoy my big & tasty, delicious meatball omelet.

But that leaves me with Saturday, & Sunday mornings... which we generally eat at home. Some days I make a great buckwheat pancake (I love mine with freshly ground peanut butter on it) and some days I make my breakfast sammies. The problem is, up until now I really did just keep using the highly processed ingredients; being completely ignorant to the fact they carry a delicious, light and all natural sausage!

This is all a progress in process so to speak, and I'm honored to share my new findings (many of you will probably go "DUH" with some of my findings while hopefully a few of you will go "aha!") with my readers. I'm slowly finding affordable, KEY WORD THERE "Affordable", alternatives that are healthy.

Here's the "Remake" of the recipe:

Good Morning Sunshine
Breakfast Sammies (6)

Serves 1

Toast muffin. While muffin is cooking mix 3 egg whites in bowl with spices & flax seed. Cook egg whites until fully cooked.

Heat up fully cooked sausage links (Jones' does offer a patty but my Wegmans doesn't carry them so I use the links, which work fine.. just a little harder to keep in the muffin).

Place egg, sausage & slice of cheese on top of muffin bottom & top with muffin top.

Other options:
  • add grilled veggies (onions & peppers)
  • you can find other meat alternatives but watch the processing of anything packaged
  • remember if you go meatless you save 2 points® also

Clean Eating with Chocolate Cookies!


How can it be? Clean Eating and chocolate, along with low points/calories? Is this a type-o? HECK NO!

Leave it to Clean Eating Magazine to come up with these babies! Weighing in at 90 calories, 3g fat, & 1g Fiber if you're counting Points it's not bad at all at 2!

Clean Ketchup

Here's a little recipe from Clean Eating Magazine that I've found myself whipping up constantly! "Why?" you may ask! Well, simply put once you taste it you won't want that bottled stuff with all the chemicals ever again! I swear, I thought it was a bit radical until I tried it and decided it's well worth the extra few minutes to make up a batch each week!

Clean Eating Magazines Ketchup

Makes 1/3 Cup

Takes 5 minutes!

INGREDIENTS:

  • 3 tbsp tomato paste
  • 2 tsp onion, grated
  • 1 clove garlic, minced
  • 1 tbsp apple cider vinegar
  • 1 tsp agave nectar

INSTRUCTIONS:

  1. Whisk all ingredients together in a bowl. Ketchup can be made a few days ahead of time and stored in refrigerator in a sealed container for about 1 week.

NUTRIENTS per 1-tsp serving:

  • Calories: 5
  • Total Fat: 0 g
  • Sat. Fat: 0 g
  • Carbs: 2 g
  • Fiber: 0 g
  • Sugars: 1 g
  • Protein: 0 g
  • Sodium: 25 mg
  • Cholesterol: 0 mg

Some helpful info on "Clean Eating"


Here are some amazing facts and articles I thought I'd share as I am on my mission to "clean eating".

Dr. Oz is truly an amazing man. He has information that he brings to the public that will honestly show you he's not your typical doctor! Many doctors are in it for the money, plain and simple. While many may have started their mission to heal and help... many more pursue their own dreams of living large. In the process, I see numerous doctors disregard natural and homeopathics as a solution all too often. Face it, if you're eating healthy, clean and organic you're probably going to be a lot less sick and for the average doctor that means you're worth a lot less money in many ways... whether it's kick backs from the drug companies for the prescriptions they write or from the insurance companies for the tests they COULD provide but don't and instead issue tons of less expensive but less accurate tests. It's a fact, medicine is an industry and YOU are a consumer! To see Dr. Oz take the approaches he takes on eating healthy, homeopathic and natural healing and so much more just makes me so excited to see him on tv!

The article is chuck FULL of great information, including fast facts about organic and which fruits & veggies to purchase organic. The article explains tons of terms that we, as consumers, are often confused about too! So check it out!

Here are a few other facts & tips I've found:

"Eating Clean" can take on a variety of meanings depending upon who you ask! For some it means absolutely organic, unprocessed, raw, and zero sweets other than perhaps fruits. (Might I add that THIS version would KILL me? LOL). Many who fall in this class would also be considered "Vegan" and would not eat any meats because they feel we are truly herbivores and not carnivores. I for one beg to differ on this but to each their own!

Others consider "Eating Clean" to be eating organic foods, low processed - meaning processed flours to produce say pasta is acceptable as long as the foods processed are organic, and unprocessed sugars are acceptable. Meats can be eaten in moderation but only if they are organic meats with absolutely no chemical ingestion. Meats are usually very high in chemicals based simply on the fact that they farm them to get bigger, quicker and meatier to produce more for the money now. Feeding chemically altered or enhanced grains are used in most meats that are NOT marked & verified "Organic". (This style of "Clean Eating" is probably closest to what I am going to be doing although I will confess I will probably eat things more "processed" than some "clean eaters" would)

To me, "eating clean" is a matter of chemicals and chemicals used to process & preserve the foods we eat. I don't think eating a boxed mac 'n cheese is horrid IF the items in the box are decipherable and aren't chemically altered. For example, I love my Wegman's organic pasta! The pasta has exactly 2 ingredients in it, organic wheat flour & water. That, to me, is pretty clean! Yes, the wheat has been processed or milled into a flour but I don't think that's always a bad thing as long as chemicals aren't a part of that process.

The Eat Clean Diet is a great site for recipes, ideas, articles & more. Yes, they are selling their book but you don't have to pay to join the site & sign up for their information. It's all free and very informative! I love this site!

When you eat clean, you eat more. Now this would lead one to believe you may actually gain weight instead of lose weight but actually, because your body is using the food so much more easily & processing it like it should it's the exact opposite. Of course, if you are choosing high fat foods (almost impossible to do anyways when eating clean) and high calorie foods you could gain but the truth is if you're truly eating clean you won't find many foods that fall in this category.

You tend to eat more often when eating clean, again because your body is digesting the food in a natural way, more efficiently! Basically, your body is doing what it is supposed to and therefore needs to be replenished regularly. It's very common to eat 5 times a day when eating like this and that's fine as long as you pay attention to WHAT you are eating those 5 times a day!


Recipes are NOT that hard to find! Honestly, even those that don't state the words "clean eating" can often be viewed as such as long as they seem to follow the general rules of what's contained in the recipe and the way you make it!

Here's some of my faves for the summer especially & I made the Kabobs on my Foreman Grill!

Chili Chicken Kabobs come in at about 4 points on the Weight Watcher system & are AMAZING in taste. I confess I do sometimes shove a few extra veggies on mine to get my veggies in & the spices make them AMAZING!!!!!!

At first glance I thought they were kind of expensive but honestly, they're the best thing I've ever purchased (okay, in magazines). I'm sure you couldn't tell by all the posts from their site!

Organics working - Today's Menu


Today's breakfast was so delish and also inexpensive! I started my day with some fat free, organic, Stonyfield French Vanilla yogurt! Of course, I sprinkled it with 1/4 cup of Maple Pecan Dream organic Granola. YUMMY! On the Points scale it comes out to about 4 points. Not bad and definitely hits the spot & filling! I was surprised it took me through the ENTIRE morning with ease. It must have been the granola that gave it enough substance to keep me full all morning!

I got the organic yogurt at the Whole Foods Co-op locally for $3.29 and the organic granola for $3.69 a pound. There's easily 4 breakfasts between the 2 items, so it's obviously affordable! Again, I debunk my OWN myth that I cannot eat organic and afford it! YAY myth debunking!

This is day 3 of my de-tox & cleansing. I've increased my dosage to 1 drop, 2x today. Day 1 I was a bit sick, almost flu-like and I could tell I was excreting toxins from my body for sure! Without going into detail my tummy was a bit crazy and I even broke out in sweats, smelly sweats, releasing the toxins. Day 2 I decided to remain at the 1 drop dosage, as the site says to the idea isn't to make yourself sick and I didn't really like it much anyways! LOL So day 2 I remained at 1 drop in the a.m. and yesterday I wasn't sick at all, which means my body's tolerating it. I'm off to take my 2nd dose here shortly, about noonish. I wanted breakfast to settle in me first, as I may be pushing it back out quickly! (Ok, TMI? LOL)

I may hold off on lunch, I'm not sure. I need to let the MMS work on the body and loading it up with food just doesn't sound like a good idea right now. Instead I just snacked on a banana!

Dinner is quick and easy with a homemade (no preservatives at all) red sauce with organic beef over some organic pasta (I buy Wegmans brand organic spaghetti, ingredients: Organic Whole Wheat Semolina, Water - Now those are ingredients you know!) This meal is also known as : Sketti & Meat Sauce! LOL I'm doing a bit of a "no-no" and having fresh Italian bread with it. It's a little more processed than I'd like but as close to unprocessed as I could come up with today. I almost died at the price of the organic, unprocessed breads! I can't afford $6-$9 for ONE LOAF OF BREAD!!!! So I've decided to go with freshly baked breads from a local baker when I can't make my own. THIS would be one of those places where the "myth" of eating organic & clean is too expensive! That's crazy to expect anyone to pay that much for a loaf of bread! Even at $4 I'd have to really debate how much I think it matters! I wish I could afford to buy my breads and rolls unprocessed & organic but it's just not feasible for me! So I'll generally buy locally baked breads and rolls from bakeries here in Erie!

The Wegman's spaghetti nutritional values ROCK! 2 oz. serving size (comes out to about 1 cup cooked) is 200 Calories, 1.5g Fat and 5g of fiber! Yes, that's 5g of fiber! How can you not love it!? That works out to be 3 pts. plain, add pts for the sauce and beef (kept to a minimal because it's a low fat beef & sauce made from real tomatoes & spices, cooked down & not filled with oils)! I have noticed this pasta, as opposed to the white, processed type cooks a bit quicker and gets a bit stickier so I rinse it quickly! That's the only real difference, other than color, and once you hide it in sauce you barely notice the color. Even my guy says it tastes "normal"!
