Spanish Rice (1)


I don't know where I found this recipe but I've made it numerous times, usually to accompany a low point chicken quesadilla! I'm kind of guessing I found this in a Cooking Light magazine due to the fact that so much nutritional value is available, but not sure where it originated from as I've had it forever so I can't really give credit where credit is due! Either way, I enjoy it often and so should you!

Spanish Rice (1)

Serves 5

1 green bell pepper chopped (about 1.25 cups)
1/2 an onion chopped (about 3/4 cup)

1 cup long grain white rice
1 - 14.8oz can chopped tomatoes (I use Ro-Tels & often the spicy
version)
2 tsp chili powder
1/2 tsp cumin
1/2 tsp paprika
2 cloves garlic chopped

Heat a tablespoon of olive oil in a pan over med-low heat.
Add peppers, onion and rice. Cook until rice begins to brown.
Add spices and garlic, cook 2 minutes longer while stirring.
Add canned tomatoes, then fill can with water and add that too. Add salt to taste, if desired. (I wait until after the rice is cooked to add any sea salt)
Bring to a boil, then cover and reduce heat to low. Cook 12 - 15 minutes until rice looks cooked. Remove from heat and let stand 15 minutes. Do NOT remove cover until final 15 minutes have elapsed.
Sprinkle with grated cheese if desired, add points accordingly (I use fat free shredded cheddar, a sprinkle adds no points)
