Reeses for Breakfast?


Well I didn't EXACTLY have some Reeses for breakfast but I will confess this was as close as I could have come while still trying to "eat clean & healthy"!

Today I, once again, enjoyed my new found love... Oikos Greek Yogurt but decided to do something a little different for breakfast. I'll confess, my pay period comes early in the month once a month with some supplemental incomes here and there so usually by late in the month my fridge is getting pretty sparse! Today was the beginning of sparse. I had no more Vans waffles left to create my favorite breakfast sammies (*gasp) and even my yogurts were running on the low side with one chocolate one and one honey vanilla left. What was a girl to do?!

I ended up thinking outside the box with what I had in the fridge/freezer and came up with this AMAZING treat that really was quite delightful! It truly was a "healthy take" on a bite of Reeses Peanut Butter cup without the bad stuff. The best part is this is going to be a stand-by for an evening snack when I'm craving something sweet & filling, because it's both..... sweet, creamy & chocolaty along with quite filling! Here's what I made, quick, simple and oh so delicious!

I toasted up 2 slices of Ezekial Sesame Bread, spread a very small amount of all natural peanut butter on it and had a side of Oikos Chocolate Greek Yogurt. I actually made it a point to eat a bit of yogurt with each bite of peanut butter toast and found that it truly tasted like a peanut butter cup! WOW! Great surprise, especially since I didn't have a lot to choose from this morning!

In the crockpot I have some organic low fat beef meatballs that I had made up & froze a while back slow cooking in an amazing organic spaghetti sauce. Smells delicious! While I debated having them over some organic wheat pasta, I may end up just having "meatball subs", using the Sandwich Thin Fill 'Ems & a sprinkle of Parmesan cheese on top! We'll have to see what I'm feeling by dinner!

Chocolate Razz Banana Smoothie


Since my recent postings about the Greek Yogurt I've come to find soooo many uses for this miracle treat! LOL While this is a short but sweet post, it does share one of my absolute favorite smoothies I've created to date!


This creamy chocolaty treat is made extra special with Kefir. I love the low fat version and happened to grab some raspberry. I figured why not give it a try. Raspberries are in season, chocolate covered razzies seem to be the craze around our local "chocolatiers" and this inspired my creation.


Chocolate Razz Banana Smoothie
Serves: 1
  • 1/2 medium banana, frozen
  • 1/2 cup raspberry Kefir (low fat)
  • 1/4 cup fat free vanilla Greek yogurt
  • 1 ice cube (crushed) - my fridge gives crushed ice so I estimate about 1 cube
  • 1 1/2  tablespoons chocolate syrup
Simply blend ingredients until smooth and pour! Delicious, creamy, chocolaty treat!

I had Chobani Greek Yogurt (not an organic yogurt) and to be  honest I don't think it's nearly as creamy as the Oikos Greek Yogurt by Stonyfield. I also think Oikos is creamier and a bit sweeter too, it's just my personal preference.  The Kefir does give it a little tangy taste & I'm sure you could mix up the flavors! I'm anxious to see what other low fat Kefir is out there!

Lovin' My Greek Yogurts!


I've been wondering about "GREEK YOGURT" for quite some time. I've read a lot of blogs by "healthy eaters" that rave about it, but I've never been too quick to buy it for a couple of reasons. First, I loved my fake flavors (Key Lime Pie, Red Velvet Cake and so on) that was loaded with chemicals. I was clueless to the horrors of what I was putting in my body, especially with the aspartame (aka rat poison if you do your research). So I enjoy yogurt but must admit that since my change in lifestyle and trying to eat more "organic" or "clean", my choices are limited. I don't eat anything with aspartame in it and I try to eat fat free or lower fat. Yeah, you can see where I'm going with this... my choices are pretty limited.


Thank goodness for Stonyfield! They have at least a decent tasting and affordable organic fat free yogurt! But wait.... welcome to their GREEK YOGURT! I kind of fell into it, forgetting that this was even a possible "organic" option. And what to my wondering eyes should appear...... Oikos Organic Greek Yogurt in caramel! A delightful creamy vanilla yogurt with a thin layer of delicious caramel on the bottom. All natural, fat free, creamy delicious, delight!

 
Next thing you know, I'm already quite happy to find this delightful caramel dream when I come upon Oikos Organic Greek Yogurt with chocolate on the bottom. Okay, are you following me here? I've found not only the worlds creamiest and most delightful organic yogurt but yogurt with caramel on the bottom or chocolate! It's fat free, delicious, organic, and did I mention caramel or chocolate?! Yes, I'm in heaven!!!!

And the best part is that the Oikos is completely affordable! A 4 pack can be found at most grocery stores and I paid about $2.49. Once again, we stifle the common thought that eating "organic" or "clean" is unaffordable! If you're counting points® each serving comes out to 2 points® each, so it's very weight friendly! All I can say is "Thanks Stonyfield!"  Check out their website for coupons and more info on the products they offer! How can you NOT feel good about a company that truly does take our world into consideration when creating a nutritious and delicious treat like this? They have all kinds of freebies on their site, from coupons to screensavers!

Summertime and Smoothies


Summer time is truly one of the best times to create some delicious, nutritious, healthy & COOL smoothies! We're in the middle of a heat wave here on the East Coast so I've been attempting to stay cool with some of my favorite cool treats. When a Skinny Cow Ice Cream Sandwich isn't what I go for, I tend to run to the blender and have found quite a few smoothie recipes that I've loved!

Here are a few I've tried lately! I try to give credit to the "source" of my recipe when I can but to be honest I often will copy a recipe and put it aside to try later, always forgetting to put where I got it. I've gotten a bit better with it putting the original source when I copy them for myself!

This first one is one of my all time faves! I don't have the original source but I just recently saw one similar on the Food Network's Healthy Eats page. Mine is a little different (oddly enough it adds more chocolate.. lol) but very similar. 

Chocolate Covered Banana in a Glass
Serves: 1
  • 1 medium banana, frozen
  • 1/4 cup skim milk
  • 1/4 cup fat free vanilla Greek yogurt
  • 1 1/2  tablespoons chocolate syrup (ok, so maybe it's not the healthiest but honest it doesn't kill ya)

Place ingredients in blender and blend until smooth. 
Optional: You can add 1 tablespoon all natural peanut butter (I use creamy but have accidentally purchased and used chunky and it works fine, just a little more lumpy) 


I took Ina's Orange Banana Smoothie from the Food Network and switched it up a little for my liking. I took out the strawberries (something about little tiny strawberry seeds that freak me out) but I'm sure it would be wonderful if you don't mind the seeds to leave them in! Click on the link to get the full original recipe, with the strawberries. You'll also notice she uses fresh, ripened bananas. I prefer using frozen bananas to get a colder, thicker smoothie texture. To get the creamier texture I also use 1/4 cup of Greek Yogurt.

My Version of The Orange Banana Smoothie
Serves 3
  • 1 1/2 cups freshly squeezed orange juice (4 oranges)
  • 1 tablespoon freshly squeezed lime juice (I use organic lime juice)
  • 1 medium frozen banana
  • 1/4 Cup fat free vanilla Greek yogurt
Place ingredients in blender and blend until smooth.

This last one is from the incredible smoothie website and you can view it in it's entirety with nutritional information HERE. Unfortunately they don't list fibers on their smoothies so it's kind of hard if you are counting Points® but I'm sure you could figure it out with just the ingredients themselves. I haven't tried this one yet but I'm dying to get the blueberries to do so! I think they're just about ready to come in locally so I can get them fresh, freeze them a bit to keep my smoothie thicker and colder, then use them!

Banana-Papaya-Blueberry Smoothie Recipe

  • 2 organic bananas, peeled
  • 1 cup papaya, cubed
  • 1 cup wild frozen blueberries (or use fresh)
  • 4 to 6 ounces of filtered water
 Blend until smooth.
